Ingredients
  

Main Ingredients

  • 1.5 lbs Boneless, skinless chicken breasts (or thighs)
  • 2 cans Canned black beans (15 oz each), rinsed and drained
  • 1 can Canned diced tomatoes (28 oz), undrained
  • 4 cups Chicken broth
  • 1.5 cups Frozen corn
  • 1 medium Yellow onion chopped
  • 3 cloves Garlic minced
  • 1.5 tablespoons Chili powder
  • 1 tablespoon Cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt (or to taste)
  • 0.5 teaspoon Black pepper (or to taste)

Instructions
 

Preparation

  • Trim excess fat from chicken, chop the onion, mince the garlic, and rinse and drain the black beans.

Cooking

  • Combine all ingredients, including chicken, beans, vegetables, broth, and spices, into the slow cooker.
  • Stir the mixture gently to ensure all ingredients are well combined.
  • Cook the soup on low for 6-8 hours, or high for 3-4 hours, until the chicken is tender and easily shredded.

Finishing Touches

  • Remove the cooked chicken from the slow cooker and shred it thoroughly with two forks.
  • Return the shredded chicken to the soup and stir it in to combine.
  • Taste the soup and adjust seasonings to your preference before serving.
