  • 6-8 slices day-old bread (sourdough or white)
  • 8 large eggs
  • 1.5 cups whole milk
  • 0.5 pound cooked and crumbled sausage
  • 0.5 cup chopped yellow onion
  • 0.5 cup chopped green bell pepper
  • 1.5 cups shredded sharp cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 tablespoon butter

Preparation

  • Grease a 9x13 inch baking dish and preheat your oven to 375°F (190°C).
  • Melt butter in a large skillet, then add chopped onion and bell pepper; cook for 5-7 minutes until softened.
  • Tear bread into bite-sized pieces and spread them evenly in the prepared baking dish.
  • Sprinkle cooked sausage, sautéed onion, and bell pepper over the bread layer.
  • Whisk together eggs, whole milk, salt, black pepper, and garlic powder in a large bowl until well combined.
  • Pour the egg mixture over the ingredients in the baking dish, pressing the bread gently to soak it up, then sprinkle with cheddar cheese.
  • Bake for 35-45 minutes, until the casserole is set, golden brown, and a knife comes out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

This casserole can be assembled the night before and refrigerated. Just add an extra 10-15 minutes to the baking time if baking from cold.
