  • 1 bag (30 ounce) frozen shredded hash browns
  • 1 pound breakfast sausage
  • 1 large onion chopped
  • 1 large bell pepper chopped
  • 12 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Cooking Hash Browns and Sausage

  • Spread frozen hash browns in the baking dish and bake for 15-20 minutes until golden.
  • Brown the breakfast sausage in a skillet, breaking it apart, and drain excess grease.
  • Add chopped onion and bell pepper to the sausage and sauté for 5-7 minutes until softened.

Assembling and Baking

  • Remove hash browns from the oven, then spread the sausage and vegetable mixture over them.
  • Sprinkle cheese generously over the sausage and hash browns.
  • In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder, then pour over the casserole layers.
  • Bake for 35-45 minutes until set and golden brown, ensuring a knife inserted comes out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving to allow it to set properly.

Notes

This casserole can be assembled the night before (without baking the hash browns) and refrigerated. Just add an extra 10-15 minutes to the total baking time if baking from cold. If you prefer a richer flavor, consider using heavy cream instead of milk. For an extra kick, add some red pepper flakes to the sausage mixture. This recipe is also great for meal prepping; portion and freeze individual servings for quick breakfasts throughout the week.
