  • 1 pound lean ground beef (e.g., 80/20)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounce) diced tomatoes, undrained
  • 1 can (15 ounce) tomato sauce
  • 2 cups beef broth
  • 1 cup uncooked long-grain white rice (not instant)
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded cheddar cheese, for topping Optional

Cooking Steps

  • Heat olive oil in a large, oven-safe skillet over medium-high heat. Add ground beef and cook until browned, then drain excess grease.
  • Add chopped onion to the skillet and cook for 3-5 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
  • Stir in diced tomatoes, tomato sauce, beef broth, uncooked rice, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  • Reduce heat to low, cover tightly, and simmer for 20-25 minutes until rice is tender and liquid is absorbed. Avoid lifting the lid often.
  • Remove from heat, rest covered for 5 minutes. Optionally, sprinkle with cheese to melt and garnish with parsley before serving.

Notes

Avoid lifting the lid too often during simmering to retain steam, which is crucial for cooking the rice evenly. The resting period helps the rice absorb any remaining liquid and ensures a fluffy texture.
