  • 1 lb breakfast sausage, crumbled
  • 2 cups diced potatoes (Yukon Gold or Russet)
  • 1 medium onion, chopped
  • 1 bell pepper (any color), chopped
  • 1/2 cup sliced mushrooms optional
  • Salt to taste
  • Black pepper to taste
  • Garlic powder to taste
  • Paprika to taste
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • Fresh parsley or chives, chopped for garnish

Cooking Steps

  • Heat olive oil in a large, oven-safe skillet over medium-high heat. Add crumbled sausage and cook until browned, then remove with a slotted spoon and set aside, leaving drippings in the pan.
  • Add diced potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until tender and slightly browned.
  • Stir in chopped onion, bell pepper, and mushrooms (if using), then cook for another 5-7 minutes until the vegetables are softened.
  • Return the cooked sausage to the skillet, combine with vegetables and potatoes, and season generously with salt, pepper, garlic powder, and paprika.
  • Create 6 small wells in the mixture, crack an egg into each well, and sprinkle shredded cheese over the skillet.
  • Cook eggs either on the stovetop by covering for 6-10 minutes, or in a preheated oven at 375°F (190°C) for 8-12 minutes, until whites are set.
  • Remove from heat, garnish with fresh parsley or chives, and serve immediately directly from the skillet for a rustic presentation.

Notes

For crispier potatoes, avoid overcrowding the skillet and cook them in a single layer. You can adjust the spice level by adding a pinch of cayenne pepper or red pepper flakes to the seasoning for an extra kick.
