  • 1 red bell pepper cut into 1-inch pieces
  • 1 zucchini cut into half-moon slices
  • 1 sweet potato peeled and diced into 1/2-inch cubes

Seasoning

  • 2 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and black pepper to taste

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the ground turkey, broccoli florets, red bell pepper, zucchini, and sweet potato.
  • Drizzle the mixture with olive oil, then sprinkle with Italian seasoning, garlic powder, onion powder, paprika, salt, and black pepper. Use your hands to gently mix everything together, ensuring the turkey and vegetables are evenly coated.
  • Spread the seasoned turkey and vegetable mixture in a single layer on the prepared baking sheet. If necessary, use two baking sheets to ensure everything roasts evenly.
  • Bake for 20-25 minutes, or until the turkey is cooked through and the vegetables are tender-crisp. Stir halfway through baking to ensure even cooking.

Notes

For extra crispy vegetables, broil for 2-3 minutes at the end, watching carefully to prevent burning.
