Ingredients
  

Pasta

  • 12 oz rotini pasta

Green Goddess Dressing

  • 1 cup plain Greek yogurt
  • 1/2 cup fresh parsley packed
  • 1/4 cup fresh chives chopped
  • 1/4 cup fresh dill chopped
  • 2 cloves garlic minced
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Vegetables & Garnish

  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely diced
  • 1/2 cup crumbled feta cheese optional

Instructions
 

Cooking the Pasta

  • Cook rotini pasta according to package directions until al dente, then drain and rinse with cold water to cool.

Preparing the Dressing

  • Combine Greek yogurt, parsley, chives, dill, minced garlic, lemon juice, olive oil, salt, and pepper in a blender or food processor. Blend until smooth and creamy, then adjust seasoning.

Assembling the Salad

  • In a large bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, and finely diced red onion.
  • Pour the Green Goddess dressing over the pasta and vegetables, tossing gently to coat.
  • If desired, fold in the crumbled feta cheese.

Serving

  • Serve immediately or refrigerate for at least 30 minutes to allow flavors to meld. Store in an airtight container in the refrigerator for up to 3 days.

Notes

For a richer flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. You can also add grilled chicken or chickpeas for extra protein.
