  • 6 large eggs
  • 1/2 cup milk whole or 2%
  • 2 slices bread, cubed preferably stale
  • 1/2 pound cooked breakfast sausage, chopped bacon, or diced ham
  • 1/2 cup chopped bell pepper any color
  • 1/4 cup chopped onion
  • 1 cup shredded cheddar cheese or cheddar-jack blend
  • Salt and black pepper to taste

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a medium-sized baking dish.

Cook Vegetables

  • If your breakfast meat isn't pre-cooked, cook it in a skillet until browned, then remove it. Sauté the chopped bell pepper and onion in the same skillet until softened, about 5-7 minutes.

Assemble Casserole

  • Spread the cubed bread evenly in the baking dish, then top with the cooked meat and sautéed vegetables.

Whisk Egg Mixture

  • In a large bowl, whisk together the eggs, milk, salt, pepper, and optional seasonings until well combined.

Add Egg Mixture and Cheese

  • Pour the egg mixture over the casserole ingredients, pressing down any floating bread pieces. Sprinkle shredded cheese generously over the top.

Bake and Serve

  • Bake for 30-35 minutes until golden brown and set. Let it rest for 5-10 minutes before slicing and serving.

Notes

This casserole can be assembled the night before and baked in the morning for a quick and easy breakfast. Cover and refrigerate overnight, then add about 10-15 minutes to the baking time.
