Main Ingredients

  • 1.5 lbs boneless, skinless chicken thighs (or breasts), cut into 1-inch pieces
  • 2 lbs Russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 1 large yellow onion, roughly chopped
  • 3 cloves garlic, minced
  • 1.5 cups low-sodium chicken broth

Seasoning

  • 1 tbsp paprika
  • 1 tsp dried thyme
  • 1 tsp onion powder
  • 0.5 tsp salt adjust to taste
  • 0.25 tsp black pepper adjust to taste

Optional Thickening

  • 2 tbsp cornstarch optional, for thickening
  • 0.25 cup cold water optional, for cornstarch slurry

Garnish

  • Fresh parsley, chopped optional, for garnish

Instructions
 

Preparation

  • Wash, peel, and cut potatoes into 1-inch cubes; chop the onion and mince the garlic.
  • Pat chicken dry and rub with a mix of paprika, thyme, onion powder, salt, and pepper.

Cooking

  • Layer the crockpot with potatoes and onions, then top with seasoned chicken and minced garlic.
  • Pour chicken broth over all ingredients in the crockpot.
  • Cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked and potatoes are tender.

Optional Thickening and Serving

  • To thicken the sauce, remove chicken and potatoes, then whisk cornstarch and cold water into a slurry and add to the crockpot liquid. Cook on high for 15-20 minutes, or until thickened.
  • Shred or dice chicken and return to the crockpot with potatoes and sauce; stir gently and garnish with fresh parsley if desired.

Notes

Adjust salt and pepper to your taste. For best results, ensure chicken reaches an internal temperature of 165°F (74°C). The cornstarch slurry is an optional step if you prefer a thicker sauce for your dish.
