Hearty Cheesy Mashed Potato Bake with Turkey Bits

Ingredients
  

Mashed Potato Base

  • 2.5 lbs Russet or Yukon Gold potatoes peeled and cut into quarters
  • 1/2 cup unsalted butter divided
  • 1/2 cup whole milk or heavy cream warmed
  • 1/4 cup sour cream or cream cheese

Seasoning & Mix-ins

  • 1 cup sharp cheddar cheese shredded, divided
  • 1/2 cup mozzarella cheese shredded, divided
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt plus more for boiling
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup cooked and crumbled turkey bacon or ground turkey
  • 2 tablespoons chopped fresh chives or parsley for garnish

Instructions
 

Prepare Potatoes

  • Peel and quarter the potatoes, then place them in a large pot with cold, salted water.
  • Bring to a boil, then reduce heat and cook for 15-20 minutes until the potatoes are tender; drain thoroughly.

Make Mashed Potatoes

  • Return hot potatoes to the pot, add 1/4 cup butter, warmed milk or cream, sour cream or cream cheese, garlic powder, onion powder, salt, and pepper.
  • Mash until smooth, being careful not to over-mash, then gently stir in half of the cheddar and mozzarella, and fold in the cooked turkey.

Bake and Serve

  • Preheat your oven to 375°F (190°C), grease a 9x13 inch baking dish, and spoon the potato mixture evenly into it.
  • Sprinkle the remaining cheddar, mozzarella, and Parmesan cheese over the top, and bake for 25-30 minutes until bubbly.
  • For a crispy top, broil for 2-3 minutes, watching closely; remove from oven and let rest for 5-10 minutes before garnishing with chives or parsley and serving.

Notes

For a richer flavor, use heavy cream and cream cheese. Don't over-mash the potatoes, as they can become gummy. Adjust salt and pepper to your taste, especially after adding the turkey bacon/ground turkey.
