  • 1.5-2 lbs boneless, skinless chicken breasts or thighs
  • 8 cups chicken broth low sodium preferred
  • 1 cup chopped carrots about 2 medium
  • 1 cup chopped celery about 2 stalks
  • 1 cup chopped yellow onion about 1 medium
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 2 cups egg noodles wide or medium
  • 1/4 cup fresh parsley, chopped for garnish, optional

Preparation

  • Start by chopping your carrots, celery, and onion, then mince the garlic.

Cooking

  • Place chicken at the bottom of the slow cooker, then add all chopped vegetables, minced garlic, dried thyme, oregano, salt, pepper, and pour in chicken broth.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is thoroughly cooked and shreds easily.
  • Carefully remove and shred the chicken with two forks, then return it to the pot.
  • Stir in egg noodles, increase heat to high, and cook for 15-20 minutes until tender, watching carefully to prevent overcooking.

Serving

  • Taste the soup, adjust seasonings as needed, and serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, consider sautéing the vegetables before adding them to the slow cooker. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
