  • 3 large, very ripe bananas
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup granulated sugar or substitute with maple syrup/honey
  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C), then lightly grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Mixing

  • In a large bowl, mash the ripe bananas until mostly smooth with a few small lumps.
  • Add applesauce, eggs, granulated sugar, and vanilla extract to the mashed bananas and whisk until well combined.
  • In a separate medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined without overmixing to avoid a tough bread.
  • Gently fold in the chocolate chips until they are evenly distributed throughout the batter.

Baking

  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Cool the banana bread in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.

Notes

For extra flavor, you can add a pinch of cinnamon or nutmeg to the dry ingredients. Ensure your bananas are very ripe for the best flavor and sweetness – they should have plenty of brown spots. This bread is delicious on its own, but also great with a dusting of powdered sugar or a dollop of yogurt.
