  • 1.5 lbs Boneless, skinless chicken breasts or thighs cut into 1-inch pieces
  • 12 oz Egg noodles wide or extra-wide
  • 1/2 cup Unsalted butter 1 stick, divided
  • 1 tablespoon Olive oil
  • 2-3 cloves Garlic minced
  • 1/2 cup Chicken broth low sodium is preferred
  • 1 teaspoon Dried parsley or 1 tablespoon fresh, chopped
  • Salt and freshly ground black pepper To taste
  • Fresh chopped chives or more parsley Optional garnish

Cooking Steps

  • Heat olive oil and 2 tablespoons of butter in a large skillet; season chicken with salt and pepper and cook for 5-7 minutes until browned.
  • Remove chicken and set aside, then boil and cook egg noodles according to package directions; drain well.
  • Melt remaining 6 tablespoons of butter in the same skillet, add minced garlic, and cook for about 1 minute until fragrant.
  • Pour in chicken broth, dried parsley, salt, and pepper, then add drained noodles, tossing to coat.
  • Return chicken to the skillet with the noodles and toss everything together until warmed through.
  • Serve in bowls, garnishing with fresh chives or parsley if desired.

Notes

Adjust seasoning to your preference. For extra flavor, consider adding a squeeze of lemon juice at the end.
