Gourmet Loaded Baked Potato with Seared Sirloin Bites

Ingredients
  

For the Baked Potatoes

  • 2 large Russet potatoes (about 10-12 oz each)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter
  • 1/4 cup sour cream (or Greek yogurt for a lighter option)
  • 2 tbsp milk (whole or 2%)

For the Steak Bites

  • 1 lb sirloin steak cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For Topping

  • 1 cup shredded cheddar cheese (or your favorite blend)
  • 2 slices cooked bacon crumbled
  • 2 tbsp chopped fresh chives or green onions

Instructions
 

Preheat Oven & Prep Potatoes

  • Preheat oven to 400°F (200°C). Scrub and dry potatoes, then pierce with a fork. Rub with olive oil, salt, and pepper, then place directly on the oven rack.

Bake Potatoes

  • Bake for 60-75 minutes until the skin is crispy and inside is tender (200-210°F/93-99°C).

Prepare Steak

  • While potatoes bake, pat steak cubes dry. Toss steak with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until coated.

Sear Steak Bites

  • Heat a cast-iron skillet over medium-high heat until very hot. Sear steak bites in batches for 2-3 minutes per side for medium-rare, or longer for desired doneness. Remove and set aside.

Load the Potatoes

  • After baking, slice potatoes lengthwise, scoop out flesh into a bowl, leaving a thin border. Add butter, sour cream, and milk, then mash until smooth. Season to taste.

Assemble

  • Spoon mashed potato back into skins. Top with seared steak bites, cheddar cheese, crumbled bacon, and chives.

Melt Cheese (Optional)

  • For extra melty cheese, return loaded potatoes to the oven for 5-10 minutes until bubbly and golden. Serve immediately.

Notes

For crispier potato skins, you can rub them with a little extra olive oil before baking. Adjust steak cooking time to your preferred level of doneness. Greek yogurt can be a great substitute for sour cream for a lighter option without sacrificing creaminess.
