  • 0.25 tsp black pepper
  • 4 oz feta cheese crumbled
  • 2 tbsp honey
  • 1 tbsp fresh thyme for garnish

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Wash and peel the sweet potatoes, then slice them into 1/4-inch thick rounds.
  • In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated and arrange them in a single layer on the prepared baking sheet.

Baking

  • Bake for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender and slightly caramelized.
  • Remove from the oven and let them cool lightly on the baking sheet for a few minutes.

Assembly

  • Carefully transfer the sweet potato rounds to a serving platter.
  • Evenly sprinkle the crumbled feta cheese over the warm sweet potato rounds.
  • Drizzle the honey over the feta and sweet potatoes, then garnish with fresh thyme before serving immediately.

Notes

For an extra touch, toast some chopped walnuts and sprinkle them over the rounds along with the feta and thyme. You can also experiment with a sprinkle of red pepper flakes for a subtle kick.
