  • 1.5 lbs boneless, skinless chicken thighs or breasts cut into 1-inch pieces
  • 0.5 cup packed light brown sugar
  • 0.25 cup soy sauce low sodium is fine
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 4-5 cloves garlic minced
  • 1 teaspoon grated fresh ginger optional, but highly recommended for an extra zing
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes optional, for a subtle kick

Slurry & Garnish

  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Fresh parsley or green onions chopped, for garnish

Instructions
 

Preparation

  • Pat the chicken dry with paper towels and season lightly with salt and pepper.
  • In a medium bowl, whisk together brown sugar, soy sauce, apple cider vinegar, olive oil, minced garlic, grated ginger, black pepper, and red pepper flakes.

Cooking

  • Add chicken to the sauce and coat well; for deeper flavor, marinate in the refrigerator for 30 minutes to 2 hours.
  • Heat a large skillet over medium-high heat, then add the chicken and sauce mixture and bring to a simmer, reducing heat to medium.
  • Cook for 10-12 minutes, stirring occasionally, until chicken is cooked through and sauce is glossy and thickened.
  • If the sauce isn't thickening, whisk cornstarch and water to create a slurry, stir into the sauce, and cook for 1-2 more minutes until it coats a spoon.

Serving

  • Remove from heat, let it rest for a minute, then garnish with fresh parsley or chopped green onions.

Notes

For best results, marinate the chicken for at least 30 minutes to allow the flavors to meld. Serve this delicious chicken with steamed rice and a side of your favorite vegetables for a complete meal.
