  • 1 cup All-Purpose Flour
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • large Egg
  • 1/4 cup Milk
  • 1 teaspoon Vanilla Extract
  • Vegetable Oil for frying, enough to fill your pan about 1-2 inches deep

Preparation

  • Mash the ripe bananas in a medium bowl until mostly smooth, leaving a few small lumps for texture.
  • In a separate large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  • Lightly beat the egg in a small bowl, then stir in the milk and vanilla extract.
  • Pour the wet ingredients and mashed bananas into the dry ingredients, mixing until just combined without overmixing.
  • Heat vegetable oil in a large skillet or Dutch oven to 350°F (175°C) and drop spoonfuls of batter into the hot oil.
  • Fry fritters for 2-3 minutes per side until golden brown and cooked through, then drain on paper towels.
  • Serve the fritters immediately, optionally garnished with powdered sugar or sauce.

Notes

For best results, use very ripe bananas (with brown spots) for maximum sweetness and flavor. Be careful not to overcrowd the pan while frying to ensure even cooking and browning. If you don't have a thermometer, you can test the oil by dropping a tiny bit of batter in—it should sizzle immediately and float to the top.
