Cookie Dough

  • 1 18.3 oz box fudgy brownie mix
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • 1/2 cup crushed peppermint candies or peppermint baking chips plus more for garnish, if desired
  • 1/4 cup chocolate chips or chunks Optional: for extra decadence

Instructions
 

Prepare the Cookies

  • In a large bowl, mix brownie mix, melted butter, eggs, and peppermint extract until just combined; do not overmix.
  • Gently fold in crushed peppermint candies or baking chips and optional chocolate chips.
  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Drop rounded tablespoons of dough onto the baking sheet, 2 inches apart, and bake for 9-11 minutes.
  • Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Optionally, sprinkle with extra crushed peppermint candy while still warm for garnish.

Notes

Ensure not to overmix the dough to keep the cookies fudgy. For an extra festive touch, add more crushed peppermint on top while the cookies are still warm!
