Main Ingredients

  • 1 sheet puff pastry thawed
  • 1 (8oz) wheel brie cheese rind removed and cut into small pieces
  • 1/4 cup cranberry sauce store-bought or homemade

Glazed Pecans

  • 1/4 cup chopped pecans
  • 1 tbsp butter melted
  • 1 tsp maple syrup or honey
  • Pinch salt

Garnish & Prep

  • Fresh rosemary sprigs for garnish (optional)
  • Cooking spray or parchment paper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and prepare a mini muffin tin by lightly spraying it or lining it with parchment paper.
  • Unroll the thawed puff pastry on a floured surface and cut it into 12 squares, each approximately 2x2 inches.

Assembly

  • Press each pastry square into a muffin tin cup to form a small cup.
  • Place a small piece of brie cheese in each pastry cup, then top with about 1 teaspoon of cranberry sauce.

Glazed Pecans

  • In a small bowl, combine chopped pecans, melted butter, maple syrup or honey, and a pinch of salt.
  • Mix well until the pecans are evenly coated.

Bake & Serve

  • Sprinkle the glazed pecans over the cranberry sauce in each puff pastry cup.
  • Bake for 12-15 minutes until the puff pastry is golden brown and puffed, and the brie is melted and bubbly.
  • Carefully remove the bites from the muffin tin, cool slightly on a wire rack, and garnish with fresh rosemary if desired; serve warm.

Notes

For an extra festive touch, use a star-shaped cookie cutter on the puff pastry before placing it in the muffin tin before baking. You can also prepare the glazed pecans ahead of time to save on prep. If using homemade cranberry sauce, ensure it's not too thin, or it might make the pastry soggy.
