Ingredients
  

Chicken Salad

  • 2-3 cups Cooked Chicken shredded or finely diced
  • ½ cup Mayonnaise or Greek yogurt
  • 2 stalks Celery finely diced
  • ¼ cup Red Onion finely minced
  • 2 tablespoons Fresh Herbs chopped (dill, parsley, or chives)
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Dijon Mustard optional
  • Salt To taste
  • Black Pepper To taste

For Serving

  • Miniature bread/rolls/toasts for crostini, slider buns
  • Cucumbers sliced into rounds
  • Mini phyllo cups
  • Endive leaves

Instructions
 

Preparation

  • If using raw chicken, poach chicken breasts for 15-20 minutes until cooked, then cool and shred or dice.
  • In a medium bowl, whisk together mayonnaise (or Greek yogurt), lemon juice, Dijon mustard (if using), salt, and pepper.
  • Add the shredded chicken, diced celery, minced red onion, and fresh herbs to the wet ingredients.
  • Gently fold all ingredients together until the chicken is evenly coated.
  • Cover and refrigerate the chicken salad for at least 30 minutes, or up to 2 hours, allowing flavors to meld.

Assembly

  • Just before serving, choose your preferred method of assembly from the options provided.
  • Top toasted baguette slices with chicken salad and fresh herbs for mini crostini.
  • Scoop chicken salad onto cucumber rounds for a light bite.
  • Fill pre-baked mini phyllo cups with chicken salad.

Notes
