Ingredients
  

For the Chicken:

  • 1.5 lbs cooked chicken shredded rotisserie, grilled breasts, or pan-fried tenders work great
  • 1/2 cup buffalo sauce your preferred brand and heat level
  • 2 tablespoons unsalted butter optional, for richness

For the Tacos:

  • 12-16 small tortillas corn or flour
  • 1/2 cup crumbled blue cheese or shredded cheddar/Monterey Jack
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup thinly sliced red onion or green onions

For Toppings & Sauce Ideas (Choose your favorites!):

  • Ranch or blue cheese dressing homemade or store-bought
  • Shredded lettuce or coleslaw mix
  • Diced celery
  • Diced tomatoes
  • Sour cream or plain Greek yogurt
  • Avocado slices or guacamole
  • Pickled jalapeƱos

For the Crunchy Celery Slaw (Unique Twist):

  • 1 cup finely diced celery
  • 1/4 cup thinly sliced red onion
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste

Instructions
 

Prepare the Chicken

  • Warm shredded chicken in a skillet or cook fresh chicken until done, then shred or dice it.
  • Melt butter in a saucepan, stir in buffalo sauce, then add chicken and toss until coated.

Prepare the Celery Slaw

  • Combine diced celery and sliced red onion in a bowl.
  • Whisk together mayonnaise, apple cider vinegar, and Dijon mustard, then pour over the vegetables and toss; season with salt and pepper.

Warm the Tortillas

  • Heat tortillas according to package directions using a skillet, microwave, or oven.

Assemble the Tacos

  • Lay out tortillas and spoon buffalo chicken mixture into the center of each.

Add Toppings

  • Garnish tacos with celery slaw, blue cheese or cheddar, dressing, cilantro, and other desired toppings.

Serve Immediately

Notes

For extra heat, add a pinch of cayenne pepper to the buffalo sauce. You can also prepare the celery slaw in advance and store it in the refrigerator for up to a day.
