Ingredients
  

Cashew Cream

  • 1 cup raw cashews soaked for at least 4 hours or boiled for 15 minutes
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1/4 cup unsweetened plant-based milk almond or soy work well

Assembly and Garnish

  • 1 English cucumber thinly sliced into rounds
  • 1/2 cup fresh dill, finely chopped
  • 1/4 cup toasted pine nuts
  • Optional garnishes: capers, fresh cracked black pepper, a drizzle of good quality olive oil

Instructions
 

Prepare Cashew Cream

  • Drain and rinse the soaked cashews. Combine cashews, nutritional yeast, lemon juice, minced garlic, apple cider vinegar, smoked paprika, black pepper, and a pinch of salt in a high-speed blender or food processor.

Blend until Smooth and Chill

  • Gradually add plant-based milk, blending until smooth and creamy. Transfer the cashew cream to a bowl, cover, and refrigerate for at least 30 minutes to firm up and meld flavors.

Assemble and Garnish

  • Arrange thin cucumber slices on a serving platter. Dollop or pipe cashew cream onto the center of each cucumber slice.
  • Sprinkle chopped fresh dill and toasted pine nuts over the cashew cream. Optionally, add capers or a light grind of fresh black pepper.

Serve

  • Serve immediately to enjoy the crispness of the cucumber with the creamy topping.

Notes

For best results, use a high-speed blender to achieve the smoothest cashew cream. Ensure cashews are well-soaked or boiled for optimal texture. You can prepare the cashew cream a day in advance and store it in the refrigerator.
