Easy Mississippi Chicken

Ingredients
  

Main Ingredients

  • 2-3 pounds boneless, skinless chicken thighs or breasts
  • 1 packet Ranch Dressing Mix (1 oz)
  • 1 packet Au Jus Gravy Mix (1 oz)
  • ½ cup unsalted butter (1 stick)
  • 5-6 pepperoncini peppers
  • 2 tablespoons pepperoncini juice
  • 1 tablespoon olive oil or butter (optional, for browning)

Instructions
 

Preparation

  • Pat the chicken dry with paper towels; cut breast meat into larger chunks if using.
  • Optionally, sear the chicken in a large skillet with olive oil or butter for 2-3 minutes per side until lightly golden, then transfer to the slow cooker.

Cooking

  • Evenly sprinkle the ranch dressing mix and au jus gravy mix over the chicken in the slow cooker.
  • Place the butter on top of the chicken, arrange pepperoncini peppers around it, and pour the pepperoncini juice over everything.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shreddable.

Serving

  • Shred the chicken directly in the slow cooker using two forks, then stir it into the sauce until well combined.

Notes

This recipe is incredibly versatile; serve shredded chicken on buns for sandwiches, over rice, mashed potatoes, or pasta. Adjust the amount of pepperoncini peppers and juice to your taste preference for more or less kick.
