Equipment

  • Oven
  • Baking Sheet
  • Large Mixing Bowl
  • Instant-read thermometer
  • Small pan

Ingredients

Meatloaf

  • 1.5 lbs ground beef (80/20 lean)
  • 1/2 cup breadcrumbs (plain or Panko)
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup finely diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs

Glaze

  • 1/2 cup ketchup or BBQ sauce (for glaze)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or foil, or use a loaf pan.
  • If desired, sauté the diced onion and minced garlic in a tablespoon of oil for 5-7 minutes until softened, then let them cool slightly.

Mixing and Baking

  • In a large bowl, gently combine the ground beef, breadcrumbs, egg, milk, Worcestershire sauce, salt, pepper, and Italian herbs, adding the cooled onion and garlic if you sautéed them.
  • Mix the ingredients until just combined, being careful not to overmix, which can make the meatloaf tough.
  • Press the mixture into a loaf pan or shape it into an oblong loaf on the prepared baking sheet.
  • Spread a generous layer of ketchup or BBQ sauce over the top of the meatloaf.
  • Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).

Resting

  • Once baked, remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing and serving.

Notes

For a richer flavor, use a mixture of ground beef and ground pork. You can also customize the glaze with a mix of mustard or brown sugar to your liking. Leftover meatloaf makes great sandwiches!
