Dump and Go Crockpot Chicken & Rotel Dinner

  • 1.5-2 lbs boneless, skinless chicken breasts or thighs
  • 1 can (10.75 oz) cream of mushroom soup (or cream of chicken)
  • 1 can (10 oz) Rotel diced tomatoes with green chilies undrained

  • Lightly grease the inside of your crockpot with cooking spray or oil to prevent sticking.
  • Place the chicken breasts or thighs in an even layer at the bottom of the slow cooker.
  • Pour the can of cream of mushroom soup evenly over the chicken.
  • Add the undrained can of Rotel diced tomatoes with green chilies over the soup and chicken, without stirring.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender and easily shredded.
  • Once cooked, you can remove and shred the chicken with two forks before returning it to the slow cooker and stirring it into the sauce, or serve the chicken as whole pieces.
  • Stir everything together and serve warm with your favorite sides.
