  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 bag (16 oz) frozen mixed vegetables
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (10.75 oz) condensed cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon dried Italian seasoning
  • Salt and black pepper to taste

Optional Additions

  • 0.5 cup uncooked small pasta e.g., elbow macaroni, ditalini
  • fresh chopped parsley for garnish

Instructions
 

Preparation

  • Place the chicken evenly at the bottom of your slow cooker, then pour the frozen mixed vegetables over the chicken.
  • In a separate bowl, whisk together the diced tomatoes (undrained), cream of chicken soup, chicken broth, garlic powder, onion powder, Italian seasoning, salt, and pepper until well combined.
  • Pour the soup mixture over the chicken and vegetables in the slow cooker, ensuring everything is well coated, then secure the lid.

Cooking

  • Cook on LOW for 6-8 hours or on HIGH for 3-4 hours, or until the chicken is thoroughly cooked and easy to shred, and the vegetables are tender.
  • If using pasta, stir it in during the last 30 minutes of cooking, increasing heat to HIGH if needed, and continue to cook until the pasta is tender.

Finishing Touches

  • Taste and adjust seasonings as desired.
  • Serve hot, optionally garnished with fresh parsley.

Notes

For best results, ensure the chicken is fully submerged in the liquid to prevent drying out. If you prefer a thicker sauce, you can remove a cup of the liquid, mix it with a tablespoon of cornstarch, and stir it back into the slow cooker during the last 30 minutes of cooking.
