  • 1.5 lbs boneless, skinless chicken breasts or thighs cut into 1-inch cubes
  • 1.5 cups uncooked long-grain white rice not instant
  • 3 cups fresh broccoli florets or frozen, thawed
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1.5 cups chicken broth
  • 1 cup milk any kind works
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • ½ cup shredded cheddar cheese optional, for topping

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • Spread uncooked rice evenly in the baking dish, then scatter cubed chicken over the rice.
  • Distribute broccoli florets over the chicken and rice layer.

Cooking

  • In a medium bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, milk, garlic powder, onion powder, salt, and pepper until smooth.
  • Pour the soup mixture evenly over the chicken, rice, and broccoli, ensuring the rice is mostly submerged.
  • Cover the dish tightly with aluminum foil and bake for 45 minutes.
  • Remove foil, sprinkle with shredded cheddar cheese (if using), and return to the oven, uncovered, for another 15-20 minutes.
  • Bake until rice is tender, chicken is cooked through (165°F/74°C), and cheese is melted and bubbly.

Serving

  • Let the casserole rest for 5-10 minutes before serving to allow liquids to absorb and the dish to set.

Notes

For best results, ensure the rice is fully submerged in the liquid during the initial bake. If using frozen broccoli, no need to thaw completely before adding to the dish. You can also vary the cheese type to your preference, such as mozzarella or a Colby Jack blend.
