  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 large yellow onion chopped
  • 3 carrots peeled and diced
  • 3 celery stalks diced
  • 4 cups chicken broth low sodium is good

  • 1 teaspoon dried thyme

Creamy Finish

  • 0.5 cup heavy cream
  • 0.25 cup cream cheese softened - Secret Ingredient 5
  • 1 tablespoon Dijon mustard Secret Ingredient 6
  • 1-2 teaspoons lemon juice freshly squeezed preferred - Secret Ingredient 7

To Taste & Garnish

  • Salt and black pepper to taste
  • fresh parsley chopped, for garnish (Optional)

Instructions
 

Combine & Cook

  • Place chicken breasts or thighs in the slow cooker with chopped onion, carrots, and celery, then pour in chicken broth.

Seasoning Power

  • Sprinkle thyme, nutritional yeast, smoked paprika, garlic powder, and white pepper over the chicken and vegetables, stirring gently to combine.

Slow Cook

  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.

Shred the Chicken

  • Remove cooked chicken from the slow cooker, shred it into bite-sized pieces with two forks, and set aside.

Creamy Finish

  • Whisk heavy cream, softened cream cheese, and Dijon mustard into the liquid remaining in the slow cooker until smooth and fully incorporated.

Bring it Together

  • Return the shredded chicken to the slow cooker and stir in the fresh lemon juice.

Taste & Adjust

  • Taste the soup and season with salt and black pepper as needed to enhance the flavors.

Serve

  • Ladle into bowls and garnish with fresh parsley if desired.

Notes

For an even richer flavor, you can lightly brown the chicken before adding it to the slow cooker, but it's not necessary. Adjust the amount of lemon juice to your taste; it brightens up the soup beautifully. If you prefer a thicker soup, you can remove some of the liquid before adding the creamy ingredients or mix a tablespoon of cornstarch with a bit of water and stir it in during the "Creamy Finish" step.
