Ingredients

Truffle Ingredients

  • 8 oz high-quality white chocolate (chips or finely chopped bar)
  • 1/2 cup heavy cream
  • 1 cup fresh blueberries
  • 1 tbsp confectioners' sugar plus more for dusting, optional
  • 1/2 tsp vanilla extract

Optional Coating/Decoration

  • 4 oz additional white chocolate for dipping
  • 1 serving sprinkles, edible glitter, or finely crushed nuts for decoration

Instructions

Preparation

  • Gently heat blueberries with a little water in a saucepan until soft, then mash and stir in sugar and vanilla.
  • For a smoother purée, press it through a fine-mesh sieve, then let it cool completely.
  • Place chopped white chocolate in a heatproof bowl, and heat heavy cream until simmering, then pour over the chocolate and let sit for 5 minutes.

Combine & Chill

  • Stir the white chocolate and cream mixture until smooth, then mix in the cooled blueberry purée until well combined.
  • Cover the ganache with plastic wrap, pressing it directly onto the surface, and refrigerate for 2-3 hours until firm.

Roll & Decorate

  • Portion out the chilled ganache and roll into bite-sized balls between your palms, placing them on parchment paper.
  • Melt additional white chocolate, dip each truffle, and decorate with sprinkles or nuts while the coating is still wet.
  • Refrigerate briefly to set the coating before serving.

Notes

For best results, use high-quality white chocolate. Truffles can be stored in an airtight container in the refrigerator for up to one week.
