  • 1.5 lbs sirloin steak cut into 1-inch pieces (or ribeye/New York strip)
  • 2 cloves garlic minced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese freshly grated
  • Salt to taste
  • Pepper to taste
  • Fresh parsley for garnish (optional)

  • Pat the sirloin pieces dry with paper towels and season generously with salt and pepper on all sides.
  • Heat olive oil in a large skillet over medium-high heat, then add steak in a single layer and sear for 2-3 minutes per side until a brown crust forms.
  • Halfway through cooking, add butter and minced garlic to the pan and spoon the melted mixture over the steak.
  • Remove the steak from the pan, transfer to a plate, tent with foil, and let rest for 5-10 minutes.
  • Reduce heat to medium-low, add heavy cream to the same skillet, and stir in Parmesan cheese until melted and the sauce slightly thickens, seasoning if needed.
  • Return the rested steak to the pan with the sauce or pour sauce over steak on plates, then garnish with fresh parsley if desired and serve immediately.

Notes

For best results, use a meat thermometer to ensure desired doneness for the steak. Let the steak rest adequately to retain its juices and tenderness. Adjust the amount of garlic and Parmesan cheese to your personal preference for a stronger or milder flavor.
