Ingredients
  

For the Chocolate Crust:

  • 1 ½ cups chocolate cookie crumbs Oreo crumbs work wonderfully!
  • ¼ cup granulated sugar
  • ½ cup unsalted butter melted

For the Peanut Butter Cheesecake Filling:

  • 16 oz cream cheese two 8-oz packages, softened
  • ¾ cup creamy peanut butter
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Chocolate Ganache Topping:

  • ½ cup heavy cream
  • 4 oz semi-sweet chocolate chips

Instructions
 

Prepare the Crust

  • Preheat oven to 350°F (175°C). In a bowl, combine cookie crumbs, ¼ cup sugar, and melted butter.
  • Press mixture into a 9x13 inch baking pan and bake for 8 minutes, then let cool slightly.

Make the Peanut Butter Cheesecake Filling

  • Beat softened cream cheese and peanut butter until smooth. Add ½ cup sugar and mix.
  • Beat in eggs one at a time, then stir in vanilla extract. Pour filling over the cooled crust.
  • Bake for 30-35 minutes until edges are set with a slight jiggle, then cool completely on a wire rack.

Add the Chocolate Ganache Topping

  • Heat heavy cream until simmering. Remove from heat and pour over chocolate chips.
  • Let sit for 5 minutes, then whisk until smooth. Pour ganache evenly over the cooled cheesecake.

Chill and Serve

  • Refrigerate bars for at least 4 hours, or preferably overnight, to set completely.
  • Once chilled, slice into bars and serve.

Notes

For best results, use full-fat cream cheese and high-quality chocolate. Ensure the cheesecake is fully cooled before adding the ganache to prevent it from melting or separating. Freezing the bars for 30 minutes before slicing can make for cleaner cuts.
