For the Apple Filling

  • 6-8 medium apples (such as Honeycrisp, Granny Smith, and Fuji)
  • 1/2 cup light brown sugar (100g) packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice (optional)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons unsalted butter cut into small pieces

For the Pecan Crumble Topping

  • 1 1/4 cups all-purpose flour (150g)
  • 1/2 cup dark brown sugar (100g) packed
  • 1/2 cup cold unsalted butter (113g), cut into cubes
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla extract
  • 1 tablespoon coarse turbinado sugar for sprinkling (optional)

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • Peel, core, and slice apples into 1/4 to 1/2 inch thick pieces.
  • Combine sliced apples with light brown sugar, flour, cinnamon, nutmeg, allspice, and lemon juice; then dot with butter.
  • Pour the apple mixture evenly into the prepared baking dish.

Crumble Topping

  • Whisk together flour, dark brown sugar, baking powder, and salt in a separate bowl.
  • Cut cold, cubed butter into the dry ingredients until coarse crumbs form.
  • Stir in chopped pecans and vanilla extract until just combined.
  • Sprinkle the pecan crumble topping evenly over the apple filling; optionally, add turbinado sugar.

Baking and Serving

  • Bake for 40-50 minutes at 375°F (190°C) until bubbly and golden brown.
  • Let cool for 20-30 minutes for the filling to set before serving warm, optionally with ice cream or whipped cream.

Notes

Allow the crumble to cool for at least 20-30 minutes after baking; this helps the apple filling set and thicken. Serve warm on its own, or enhance the experience with a scoop of vanilla ice cream, whipped cream, or a drizzle of caramel sauce.
