Ingredients
  

For the Dough:

  • 1 ½ cups shredded mozzarella cheese low-moisture, part-skim works best
  • 2 oz cream cheese softened
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 tablespoons almond flour
  • 1 teaspoon xanthan gum

For the Filling:

  • 4 oz cream cheese softened
  • ¼ cup powdered erythritol or monk fruit sweetener
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract

For the Topping (Optional):

  • 2 tablespoons erythritol or monk fruit sweetener
  • 1 teaspoon ground cinnamon

Instructions
 

Prepare the Dough

  • Combine mozzarella and 2 oz softened cream cheese in a microwave-safe bowl. Microwave in 30-second intervals until completely melted and smooth.

Form the Dough

  • Add egg yolk, vanilla extract, almond flour, and xanthan gum to the melted cheese. Mix vigorously until a cohesive, smooth, and pliable dough forms.

Roll Out the Dough

  • Place the dough between two sheets of parchment paper and roll into an even rectangle, 1/8 to 1/16 inch thick, for crispier roll-ups.

Make the Filling

  • In a small bowl, combine 4 oz softened cream cheese, powdered sweetener, 1 teaspoon cinnamon, and vanilla extract. Mix until smooth.

Assemble the Roll-Ups

  • Remove the top parchment paper and spread the cream cheese filling evenly over the dough, leaving a small border on one long edge.

Roll and Slice

  • Roll the dough tightly into a log, using parchment paper for assistance. Slice the log into 10-12 even pieces, about ¾ to 1 inch thick.

Prepare for Baking

  • Line a baking sheet with fresh parchment paper and arrange the sliced roll-ups, leaving space between them.

Bake

  • Preheat oven to 375°F (190°C) and bake for 12-18 minutes, or until golden brown and crispy, watching carefully to prevent over-baking.

Add Topping (Optional)

  • While warm, combine 2 tablespoons sweetener and 1 teaspoon cinnamon, then sprinkle generously over the baked roll-ups.

Serve

  • Let cool slightly before serving; they are best enjoyed warm and crispy.

Notes

For best results, ensure your cream cheese is softened to room temperature for both the dough and the filling. If the dough becomes too stiff while rolling, you can microwave it for a few seconds to soften it again. These roll-ups are best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for 2-3 days and reheated gently in the microwave or oven for a few minutes.
