  • 4-6 bone-in, skin-on chicken thighs
  • 1-2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper freshly ground
  • 1 tsp garlic powder
  • 1 tsp paprika smoked paprika suggested
  • ½ tsp dried oregano, thyme, or rosemary optional

Preparation

  • Adjust your oven rack to the middle position and preheat the oven to 400°F (200°C).

Cooking

  • Place chicken thighs on a paper towel-lined plate and pat them very dry on both sides.
  • In a small bowl, combine olive oil, salt, black pepper, garlic powder, paprika, and any optional herbs.
  • Drizzle the seasoning mixture over the dried chicken thighs, rubbing it evenly all over, including under the skin.
  • Arrange the seasoned chicken thighs skin-side up on a baking sheet, using a wire rack for extra crispy skin if desired.
  • Bake for 35-45 minutes until the internal temperature reaches 175°F (80°C) and the skin is deeply golden and crispy.

Resting

  • Remove chicken from the oven and let it rest on the baking sheet for 5-10 minutes before serving.

Notes

For even crispier skin, ensure chicken is thoroughly dried before seasoning. You can also broil for the last few minutes for extra crispness, watching carefully to prevent burning.
