  • 4 boneless, skinless, about 6 oz each, or chicken thighs for extra juiciness Chicken Breasts
  • 2 tablespoons Olive Oil
  • 3-4 cloves Garlic minced
  • 1/2 cup Sun-Dried Tomatoes packed in oil, drained and roughly chopped
  • 5 oz Spinach fresh
  • 1.5 cups Heavy Cream
  • 1/2 cup Chicken Broth
  • 1/2 cup Parmesan Cheese freshly grated
  • 1 teaspoon Italian Seasoning
  • Salt and Black Pepper To taste
  • Red pepper flakes Optional, for a little kick
  • fresh basil or parsley Optional, for garnish

  • Pat the chicken breasts dry and season generously with salt, pepper, and ½ teaspoon of Italian seasoning.
  • Sear the chicken in olive oil in a large skillet for 5-7 minutes per side until golden brown and cooked through; then remove and set aside.
  • Sauté minced garlic in the same pan for about 1 minute until fragrant.
  • Stir in sun-dried tomatoes and chicken broth, simmering for 2-3 minutes to reduce slightly and capture pan flavors.
  • Pour in heavy cream and the remaining ½ teaspoon of Italian seasoning, then simmer for 3-5 minutes until the sauce slightly thickens.
  • Add fresh spinach to the sauce, stirring until it completely wilts.
  • Stir in grated Parmesan cheese until melted and smooth, then adjust seasonings to taste.
  • Return the chicken to the pan, spoon sauce over it, and warm through for a couple of minutes; garnish with fresh basil or parsley if desired.

Notes

For extra juiciness, consider using chicken thighs instead of breasts. Adjust the amount of red pepper flakes to your preferred spice level. Freshly grated Parmesan cheese will yield the best flavor and texture for the sauce.
