  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 4 oz cream cheese, softened
  • 16 oz frozen corn (fire-roasted optional)
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled Cotija cheese (or feta)
  • 2 tbsp fresh lime juice
  • 1/4 cup fresh cilantro, chopped

Seasoning

  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and black pepper to taste

Optional Garnishes

  • diced red onion
  • sliced jalapeƱos
  • hot sauce

Instructions
 

Cooking

  • Place chicken in the slow cooker and season evenly with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  • Add softened cream cheese over the chicken, then scatter frozen corn on top.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  • Remove and shred the chicken, then return it to the slow cooker with the corn mixture.
  • Stir in mayonnaise, Cotija cheese, and fresh lime juice until combined and heated, allowing the sauce to thicken.
  • Mix in fresh cilantro just before serving, adjusting seasonings as needed.

Serving

  • Garnish with red onion, jalapeƱos, or hot sauce, and serve warm.

Notes

For extra flavor, use fire-roasted corn. If you don't have Cotija cheese, feta cheese is a good substitute. Adjust the amount of chili powder and hot sauce to your preferred spice level.
