  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 cup chicken broth or stock
  • ½ cup heavy cream or half-and-half/milk
  • ½ cup freshly grated Parmesan cheese plus more for serving
  • 4-6 minced garlic or 1 tablespoon pre-minced
  • 4 ounces cream cheese, softened
  • 1 tablespoon cornstarch optional, for thickening
  • 2 tablespoons cold water optional, for cornstarch slurry
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped optional, for garnish

  • Pat the chicken dry and season generously with salt and black pepper.
  • In a bowl, whisk together chicken broth, minced garlic, Italian seasoning, onion powder, salt, and pepper.
  • Place the seasoned chicken in a single layer in the slow cooker.
  • Dot the cream cheese over the chicken and pour the broth mixture evenly over everything.
  • Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours until the chicken is cooked through and easily shreds.
  • Remove and shred the chicken; if a thicker sauce is desired, whisk cornstarch and cold water to create a slurry and stir into the sauce, cooking on HIGH for 15-20 minutes until thickened.
  • Return the shredded chicken to the slow cooker, stir in heavy cream and Parmesan cheese until melted and uniform.
  • Garnish with fresh parsley if desired, and serve hot.

Notes

For best results, use freshly grated Parmesan cheese. Adjust seasonings to your preference. If you don't have a slow cooker, this recipe can be adapted for an instant pot or oven, but cooking times will vary.
