  • 1 (8 oz) block cream cheese, softened
  • 1 (10.75 oz) can cream of chicken soup
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley for garnish, optional
  • Salt and black pepper to taste
  • 1 tbsp olive oil

  • Pat the chicken breasts or thighs dry with paper towels and season generously with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat and sear the chicken for 2-3 minutes per side until lightly golden.
  • Place the seared chicken into the bottom of your slow cooker.
  • In a medium bowl, whisk together the softened cream cheese, cream of chicken soup, ranch seasoning mix, and chicken broth until smooth.
  • Pour the creamy mixture evenly over the chicken in the slow cooker.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is cooked through and easily shredded.
  • Once cooked, shred the chicken with two forks and stir it into the creamy sauce until fully coated.
  • Garnish with fresh parsley, if desired, and serve hot.

Notes

Searing the chicken before slow cooking adds a richer flavor to the dish. Cooking times may vary depending on your slow cooker model.
