Pasta

  • 10 oz. pasta (fettuccine, rotini, or penne)

Sauce

  • 1 tbsp. olive oil
  • 1 cup cooked shredded chicken
  • 4-5 garlic, minced cloves
  • 1 tbsp. all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese plus more for serving
  • Salt and freshly ground black pepper to taste

Garnish (Optional)

  • Fresh parsley, chopped

Cooking Steps

  • Cook pasta in salted boiling water until al dente, then reserve 1/2 cup of pasta water before draining.
  • Heat olive oil in a large skillet; sauté minced garlic for 30-60 seconds until fragrant, then add cooked shredded chicken and stir for 1-2 minutes.
  • Sprinkle flour over the chicken and garlic, stirring continuously for 1 minute to cook the flour.
  • Gradually whisk in chicken broth, bring to a gentle simmer, then stir in heavy cream and simmer for 2-3 minutes until slightly thickened.
  • Remove from heat, stir in 1/2 cup of Parmesan cheese until melted, and season with salt and pepper.
  • Add drained pasta to the skillet, toss until well coated, and add reserved pasta water if the sauce is too thick.
  • Serve immediately, garnished with extra Parmesan cheese and fresh parsley if desired.

Notes

For best results, do not overcook the pasta initially as it will continue to cook slightly when combined with the hot sauce. Adjust the amount of reserved pasta water as needed to achieve your desired sauce consistency.
