  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 5-6 ounces fresh spinach
  • 1 cup heavy cream
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • Salt and freshly ground black pepper to taste
  • Red pepper flakes Optional: for a little kick

Cooking Steps

  • Bring a large pot of salted water to a boil, then add the gnocchi and cook according to package directions, typically 2-3 minutes, until they float to the surface. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat, add minced garlic and cook for 30 seconds until fragrant, then add fresh spinach in batches and cook until wilted, about 2-3 minutes.
  • Pour in the heavy cream, stir well with the spinach and garlic, bring to a gentle simmer, then reduce heat to low.
  • Stir in crumbled feta and 1/4 cup Parmesan cheese, cooking for 2-3 minutes until melted and the sauce slightly thickens.
  • Add the cooked gnocchi to the skillet, toss gently to coat, and season with salt, pepper, and optional red pepper flakes to taste.
  • Serve the gnocchi hot, garnished with extra grated Parmesan cheese if desired.

Notes

For extra flavor, you can sauté some chopped shallots with the garlic. Adjust the amount of red pepper flakes to your preferred level of spice. This dish is best served immediately.
