  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 lb cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 tbsp all-purpose flour (or gluten-free flour/cornstarch for GF)
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Cooking Steps

  • Pat the chicken dry and season generously with salt and pepper on both sides.
  • Heat olive oil in a skillet, then sear the chicken for 4-5 minutes per side until golden brown; remove and set aside.
  • Add butter to the pan, then sauté sliced mushrooms for 5-7 minutes. Add minced garlic and cook for one minute until fragrant.
  • If using, stir in flour for 1 minute, then slowly pour in chicken broth, scraping the bottom of the pan to deglaze, and bring to a simmer.
  • Stir in heavy cream and bring to a gentle simmer, then add Parmesan cheese and stir until melted and the sauce is smooth and slightly thickened.
  • Nestle the seared chicken back into the pan, spooning sauce over it, and cook for 5-7 minutes to finish cooking.
  • Garnish with fresh chopped parsley and serve immediately.

Notes

Ensure chicken is fully cooked through before serving. For a thicker sauce, you can add a bit more flour or cornstarch. This dish pairs well with pasta, rice, or a side salad.
