  • 1.5-2 pounds boneless, skinless chicken breasts
  • 1/4 cup oil from sun-dried tomatoes (or olive oil)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons Italian seasoning divided
  • 1 cup chopped sun-dried tomatoes in oil, drained
  • 4-5 cloves garlic, minced
  • 1.5 cups low-sodium chicken broth
  • 4 ounces cream cheese, softened, or 1/2 cup heavy cream
  • 5-6 ounces fresh spinach

  • Season chicken breasts with salt, pepper, and 1 teaspoon of Italian seasoning. Sear chicken in oil from sun-dried tomatoes until golden brown.
  • Transfer seared chicken to the slow cooker. Add sun-dried tomatoes, minced garlic, and remaining Italian seasoning, then pour in chicken broth.
  • Cover and cook on low for 3-4 hours or high for 2-3 hours until the chicken is cooked through and easily shredded.
  • Remove and shred chicken, then stir softened cream cheese or heavy cream into the slow cooker sauce until smooth and combined.
  • Add fresh spinach to the slow cooker and stir until wilted. Return shredded chicken and coat everything in the creamy Tuscan sauce.
  • Taste and adjust seasoning as needed, then serve hot with your favorite side.

Notes

For an extra boost of flavor, you can marinate the chicken for at least 30 minutes before searing. If you prefer a thicker sauce, you can remove the chicken and spinach and simmer the sauce on high for 10-15 minutes, or until it reduces to your desired consistency.
