  • 2-3 cups cooked chicken shredded or diced
  • 1 can condensed cream of mushroom soup 10.5 oz
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 cup cooked rice or 2 cups egg noodles, cooked al dente
  • 2 cups frozen broccoli florets thawed
  • 1/2 small onion diced
  • 1 clove garlic minced
  • 1.5 cups shredded cheddar cheese divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup crushed butter crackers like Ritz
  • 1 tablespoon olive oil or butter

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet, sauté diced onion in olive oil or butter for 3-5 minutes until soft; then add minced garlic and cook for another minute until fragrant.

Mixing and Baking

  • Whisk together cream of mushroom soup, sour cream, and chicken broth in a large bowl; then stir in the sautéed onion and garlic, salt, pepper, and garlic powder.
  • Gently fold in the cooked chicken, rice or noodles, thawed broccoli, and 1 cup of cheddar cheese, ensuring everything is evenly coated.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Sprinkle the remaining 1/2 cup of cheddar cheese and crushed butter crackers over the top.
  • Bake for 25-30 minutes, or until bubbling and the cheese is golden; cover with foil if browning too quickly.
  • Remove from oven and let rest for 5-10 minutes before serving.

Notes

For a richer flavor, consider using homemade cream of mushroom soup. You can also add a pinch of dried thyme or a sprinkle of paprika for extra depth. If you prefer a crispier topping, toast the crushed crackers in a dry pan for a few minutes before sprinkling.
