Cranberry Brie Bites

Ingredients
  

Main Ingredients

  • 1 sheet or can Puff Pastry or Crescent Roll Dough (8 oz. or equivalent)
  • 4-6 ounces Brie Cheese rind left on (or removed if preferred), cut into small cubes (about 1/2 inch)
  • 1/2 cup Cranberry Sauce either canned whole berry cranberry sauce or homemade

Optional Garnish

  • Fresh Rosemary chopped
  • Pecans chopped

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 24-cup mini muffin tin.
  • Thaw puff pastry if using, then unroll dough onto a floured surface and cut into 24 equal 2x2 inch squares.

Assembly

  • Press one dough square into each mini muffin cup, then place one brie cube in the center of each.
  • Spoon about 1/2 teaspoon of cranberry sauce over the brie in each cup.

Baking and Serving

  • Bake for 12-15 minutes until golden brown and bubbly, then cool in the tin for 5-10 minutes.
  • Carefully remove to a serving platter and garnish with fresh chopped rosemary or toasted pecans just before serving.

Notes

For best results, do not overfill the cups. The cooling step is important to prevent sticking and maintain shape.
