  • 2 celery stalks, diced

  • 8 cups chicken broth low sodium preferred
  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup long-grain white rice such as basmati or jasmine
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh parsley, chopped for garnish

  • Heat olive oil in a large pot over medium heat, then add chopped onion, carrots, and celery; cook for 8-10 minutes until softened.
  • Stir in minced garlic and cook for another minute until fragrant.
  • Pour in chicken broth, add dried thyme and marjoram, then bring to a gentle boil before simmering for 15 minutes.
  • Add cooked chicken and uncooked rice, bringing the soup back to a simmer.
  • Cover and simmer for 15-20 minutes, or until the rice is tender, stirring occasionally to prevent sticking.
  • Season generously with salt and pepper, then ladle into bowls, garnish with fresh parsley, and serve hot.

Notes

This soup is even better the next day as the flavors continue to meld. Feel free to adjust the amount of rice for a thicker or thinner soup.
