  • 1 tbsp sesame oil
  • 1 lb large shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 2 green onions, sliced (divided)
  • 1 package (14 oz) pre-cooked udon noodles

For the Sauce

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp mirin
  • 1 tsp brown sugar
  • 1/2 tsp cornstarch

  • In a small bowl, whisk together soy sauce, oyster sauce, mirin, brown sugar, and cornstarch until smooth. Set the sauce aside.
  • Heat sesame oil in a large skillet or wok over medium-high heat. Cook shrimp for 1-2 minutes per side until pink and opaque; then remove and set aside.
  • Add minced garlic and grated ginger to the same skillet, stirring for 30 seconds until fragrant. Add sliced red bell pepper and snap peas, stir-frying for 3-4 minutes until tender-crisp. Add the white parts of the green onions and stir-fry for another minute.
  • Add pre-cooked udon noodles to the skillet, separating them if needed under warm water. Pour the prepared sauce over the noodles and vegetables, tossing to ensure even coating.
  • Return the cooked shrimp to the skillet and toss gently to combine and heat through for about 1 minute.
  • Remove from heat, garnish with the green parts of the green onions and sesame seeds if desired. Serve immediately.

Notes

For extra flavor, you can marinate the shrimp in a small amount of soy sauce for 10 minutes before cooking. Adjust the spice level by adding a pinch of red pepper flakes with the garlic and ginger. Make sure not to overcook the shrimp, as they can become rubbery quickly.
