  • 4 (6 oz) salmon fillets
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup sun-dried tomatoes packed in oil, drained and sliced
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions
 

Preparation

  • Season salmon fillets with salt and pepper on both sides.
  • Heat olive oil in a large skillet over medium-high heat, then sear salmon for 4-5 minutes per side until cooked, and set aside.

Tuscan Sauce

  • In the same skillet, cook the chopped onion for 3-4 minutes until softened, then add minced garlic and cook for another minute.
  • Stir in sliced sun-dried tomatoes and broth, bring to a simmer, and cook for 2-3 minutes to meld the flavors.
  • Reduce heat to low, stir in heavy cream and Parmesan cheese, and cook until the cheese melts and the sauce is smooth and slightly thickened.
  • Add fresh spinach to the sauce and cook for 1-2 minutes until it wilts.

Serving

  • Return the cooked salmon to the skillet and spoon the Tuscan sauce over the fillets.
  • Garnish with fresh basil or parsley if desired, and serve immediately.

Notes

Serve this dish with a side of pasta, rice, or crusty bread to soak up the delicious sauce. For a lighter option, pair with roasted asparagus or a simple green salad.
