Truffle Base

  • 1 cup mascarpone cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup brewed coffee strong, cooled
  • 2 tablespoons coffee liqueur optional, but recommended
  • 2 cups ladyfingers crushed into fine crumbs

For Dusting

  • 1/4 cup unsweetened cocoa powder for dusting

Preparation

  • In a medium bowl, beat softened mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Add cooled strong brewed coffee and coffee liqueur (if using), then mix until well combined.
  • Gently fold in the crushed ladyfinger crumbs until a thick, uniform, and moist dough forms.
  • Cover and refrigerate the mixture for at least 30 minutes until firm enough to roll.
  • Scoop out small portions (about 1 tablespoon each) and roll them into smooth balls.
  • Place cocoa powder in a shallow dish, then roll each truffle until fully coated. Arrange on a platter and refrigerate until ready to serve.

Notes

For best results, ensure your mascarpone cheese is at room temperature before beating to prevent lumps. Adjust the amount of coffee liqueur to your preference, or omit it for a non-alcoholic version. Ensure ladyfingers are finely crushed for a smoother truffle texture. If the mixture is too sticky to roll, chill it for an additional 15-30 minutes. Truffles can be stored in an airtight container in the refrigerator for up to 3-4 days.
