Classic Texas Roadhouse Smothered Chicken with Jack Cheese

  • 1.5 lbs Boneless, skinless chicken breasts 4 breasts
  • 8 oz Cremini mushrooms sliced
  • 1 medium Yellow onion thinly sliced
  • 2 Garlic cloves, minced
  • 1 cup Monterey Jack cheese shredded

Sauce & Seasoning

  • 2 tbsp Olive oil
  • 1/2 cup Chicken broth
  • 1 tsp Worcestershire sauce
  • Salt and freshly ground black pepper to taste

Garnish (Optional)

  • Fresh chopped parsley or chives

Instructions
 

Preparation

  • Pat chicken breasts dry with paper towels and season generously with salt and pepper on both sides.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat, then sear chicken breasts for 4-5 minutes per side until golden brown and cooked through (165°F/74°C). Remove the chicken and set it aside.

Cooking

  • Add the remaining 1 tablespoon of olive oil to the same skillet, then cook sliced mushrooms and onions over medium heat for 8-10 minutes until softened and browned. Add minced garlic and cook for another minute until fragrant.
  • Pour in chicken broth and Worcestershire sauce, scraping up any browned bits from the bottom, and simmer for 2-3 minutes until slightly reduced.

Assembly & Finish

  • Return the cooked chicken breasts to the skillet, nestling them into the mushroom and onion mixture, and top each with shredded Monterey Jack cheese.
  • If using an oven-safe skillet, transfer to a preheated oven at 375°F (190°C) for 5-7 minutes until cheese is melted and bubbly; otherwise, cover and cook on the stovetop over low heat until cheese is melted.
  • Garnish with fresh parsley or chives, if desired, and serve the smothered chicken hot.

Notes

For extra flavor, consider marinating the chicken breasts for at least 30 minutes before searing. You can also add a splash of white wine to the sauce for an additional layer of depth. If you don't have Monterey Jack cheese, provolone or a mild cheddar would be good substitutes.
