Ingredients
  

Meatloaf

  • 2 lbs ground meat ideally 80/20 ground beef and ground pork mix
  • 1 cup Panko breadcrumbs
  • 2 large eggs lightly beaten
  • ½ cup yellow onion finely diced
  • 2 minced garlic cloves
  • ½ cup whole milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Glaze

  • ¼ cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon apple cider vinegar

Instructions
 

Preparation

  • In a large bowl, combine ground meat, Panko breadcrumbs, beaten eggs, diced onion, minced garlic, milk, Worcestershire sauce, salt, and pepper.
  • Gently mix the ingredients until just combined, being careful not to overmix to avoid a tough meatloaf.

Shaping and Glazing

  • Shape the mixture into a 9x5 inch loaf and place it in a loaf pan or on a parchment-lined baking sheet.
  • Preheat your oven to 375°F (190°C) and whisk together ketchup, brown sugar, and apple cider vinegar for the glaze.
  • Brush half of the prepared glaze over the top of the meatloaf.

Baking and Resting

  • Bake for 55-65 minutes until an internal temperature of 160°F (71°C) is reached.
  • During the final 10-15 minutes of baking, brush the remaining glaze over the meatloaf.
  • Remove from the oven and let it rest for 5-10 minutes before slicing to allow the juices to redistribute.
  • Slice and serve hot.

Notes

For best results, use a meat thermometer to ensure the meatloaf reaches the correct internal temperature. Allowing the meatloaf to rest is crucial for a tender and juicy outcome.
